Egg plant Fry 2


Indian Eggplant : 10 nos., sliced thin lengthwise
Oil : 1/3 cup
Red chilli powder : 2 tsp
Garam masala : 1/2 tsp
Mustard seeds : 1/4 tsp
Salt to taste


  1. Take oil in a pan and splutter mustard seeds.
  2. Add eggplant and toss well.
  3. Add red chilli powder, garam masala and salt and mix well.
  4. Allow to roast well on medium heat. Keep tossing inbetween to let it get roasted thoroughly till slightly crisp.
